Chipotle Black Bean Soup

Directions

• 1 ½ lbs ground beef, pork, turkey or sausage
• 28 oz low salt beef or chicken broth
• 16 oz mild or medium chunky salsa
• 15-oz can golden hominy, rinsed & drained
• 15-oz can black beans, rinsed & drained
• 2 c loose-pack frozen Potatoes O’Brian
• 1-2 canned chipotle chiles in adobo sauce
• 2 t chili powder
• 2 t dried oregano, crushed
• 1 t ground cumin
• Chopped avocado & shredded cheddar for garnish (optional)

In large skillet, cook ground meat till brown & drain. Transfer to 4-or 5-quart slow cooker. Finely chop chiles, & add to meat along with broth, salsa, beans, hominy, potatoes, chili powder, oregano & cumin. Cover & cook on low 7-8 hours or high 3 ½-4 hours. Garnish, if desired.
